Ingredients

  • 2 steaks (10 oz each) beef steaks (ribeye or NY strip, 1-inch thick)
  • ½ lb fresh asparagus spears
  • 3 tbsp butter
  • 3 cloves garlic cloves, minced
  • ¼ cup Parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped

Instructions

  1. 1

Pat steaks dry with paper towels. Season both sides generously with salt and black pepper.

  2. 2

Heat olive oil in a 12-inch cast iron skillet over medium-high until shimmering, about 1 minute.

  3. 3

Sear steaks 90 seconds per side without moving. Edges should look browned; center stays rare to medium-rare.

  4. 4

Transfer steaks to a plate. Toss asparagus with oil and salt, spread in the skillet, cook 4 minutes until edges blister.

  5. 5

Reduce heat to medium. Add butter and garlic to the skillet, cook 30 seconds until fragrant, then stir in Parmesan.

  6. 6

Return steaks to skillet, spoon garlic-butter sauce over the top, sprinkle with parsley, and serve immediately.
