Ingredients

  • 2 pieces pork chops (1-inch thick)
  • 2 cloves garlic (minced)
  • 1 tbsp italian seasoning
  • 2 tbsp olive oil
  • 2 medium carrots (cut into 2-inch pieces)
  • 2 medium parsnips (cut into 2-inch pieces)
  • 1 pinch salt and pepper to taste

Instructions

    Toss carrots and parsnips with 1 tbsp olive oil, salt, and pepper; spread on air fryer rack.

    Set air fryer to 400°F and start cooking vegetables for 8 minutes while you prep the pork.

    Mix minced garlic, Italian seasoning, 1 tbsp olive oil, salt, and pepper; rub on both sides of pork chops.
