Ingredients

  • 1.2 lb lamb chops (6–8 pieces, 1.5 inches thick)
  • 4 cloves garlic, minced
  • 1 whole lime (zested + juiced)
  • 1.5 tsp ground cumin
  • 1 tsp dried oregano
  • 2 tbsp olive oil

    Pat lamb chops dry with paper towels. Season generously with salt and black pepper on both sides.

    Mix minced garlic, lime zest, cumin, oregano, and olive oil in a small bowl until it forms a paste.

    Rub the garlic-cumin paste all over both sides of each lamb chop, pressing gently so it sticks.

    Heat a heavy skillet over medium-high until it shimmers, about 90 seconds, then add the lamb chops.
