Ingredients
- 1.2 lb lamb chops (6–8 pieces, 1.5 inches thick)
- 4 cloves garlic, minced
- 1 whole lime (zested + juiced)
- 1.5 tsp ground cumin
- 1 tsp dried oregano
- 2 tbsp olive oil
Instructions
- 1
Pat lamb chops dry with paper towels. Season generously with salt and black pepper on both sides.
- 2
Mix minced garlic, lime zest, cumin, oregano, and olive oil in a small bowl until it forms a paste.
- 3
Rub the garlic-cumin paste all over both sides of each lamb chop, pressing gently so it sticks.
- 4
Heat a heavy skillet over medium-high until it shimmers, about 90 seconds, then add the lamb chops.
- 5
Sear 2 minutes per side without moving. The exterior should be browned and crusty; inside stays pink.
- 6
Squeeze fresh lime juice over the chops and serve immediately, while they're still hot and juicy.
