Ingredients
- 1 lb cauliflower, riced (fresh or frozen)
- 2 cloves garlic, minced
- 3 tbsp olive oil
- 1 tbsp butter
- 2 large eggs
- 0 to taste salt and pepper

Heat 3 tbsp olive oil in a large skillet over medium-high heat until shimmering, about 1 minute.

Add minced garlic and cook for 30 seconds until fragrant, then add riced cauliflower and stir.

Sauté cauliflower for 6–8 minutes, stirring occasionally, until golden and tender.

Season with salt and pepper, then push mixture to the side of the skillet.

Add 1 tbsp butter to the empty side, crack both eggs into it, and fry 3–4 minutes until whites set and yolks jiggle.

Divide cauliflower rice between plates and top each with a fried egg.
