Ingredients

  • 1 lb pork tenderloin
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped

Instructions

  1. 1

Pat the pork dry and season generously with salt and black pepper on all sides.

  2. 2

Heat 1 tbsp oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

  3. 3

Sear the pork 3 minutes per side without moving, until browned; center stays pink.

  4. 4

Reduce heat to medium, add 3 tbsp butter and garlic, then cook 1 minute until fragrant.

  5. 5

Spoon the garlic butter over the pork twice, then rest off heat 3 minutes before slicing.

  6. 6

Garnish with parsley and serve alongside warm mashed potatoes and sautéed greens.

Tools you’ll need

  • 12-inch skillet or larger
