Ingredients

  • 2 chops pork chops (bone-in or boneless, 1-inch thick)
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 lb potatoes, cut into 1-inch chunks

Instructions

    Toss potatoes with oil, salt, and pepper, spread on a sheet pan, roast at 425°F for 18 minutes.

    Pat pork chops dry, season both sides generously with salt and pepper.

    Heat a skillet over medium-high until smoking, sear pork chops 2 minutes per side without moving.

    Add butter and garlic to the pan, tilt the skillet, baste the chops 60 seconds until fragrant.
