Ingredients
- 2 large (6 oz each) lobster tails, split lengthwise
- 6 tbsp butter, divided
- 4 cloves garlic, minced
- 1 whole (juiced) fresh lime
- 1 tbsp fish sauce
- 3 cups garden salad mix (lettuce, cucumber, tomato, carrot)
- 2 stalks scallions, chopped
- ½ whole red chili, sliced thin

Melt 4 tbsp butter in a small bowl. Stir in minced garlic, lime juice, and fish sauce until fragrant, about 1 minute.

Pat lobster tails dry. Brush the flesh side generously with the garlic butter mixture.

Heat a grill or grill pan over medium-high until very hot, about 2 minutes. Brush the grates with oil.

Grill lobster tails flesh-side down for 4–5 minutes without moving until the meat is opaque and edges char slightly.

Toss salad mix with remaining 2 tbsp melted butter, salt, and pepper. Top with scallions and chili.
