Ingredients
- 2 each (6–8 oz each) lobster tails
- 4 tbsp unsalted butter
- 3 cloves garlic, minced
- 8 oz pasta (linguine or spaghetti)
- 1 each lemon, halved
- 2 tbsp fresh chives, chopped
Instructions
- 1
Boil salted water in a large pot; add pasta and cook until al dente, about 9 minutes. Reserve 1/2 cup pasta water, then drain.
- 2
While pasta cooks, preheat grill or grill pan to medium-high heat. Pat lobster tails dry and brush flesh with 1 tbsp melted butter.
- 3
Grill lobster tails shell-side down for 6–7 minutes without moving. Flesh should be opaque and meat pull from shell easily.
- 4
Melt remaining 3 tbsp butter in the pasta pot over medium heat; add minced garlic and cook until fragrant, about 45 seconds.
- 5
Add drained pasta and 1/4 cup reserved pasta water to the butter-garlic mixture; toss until silky, adding more water if needed.
- 6
Divide pasta between two plates, top each with a lobster tail, garnish with chives, and serve with lemon wedges.
Tools you’ll need
