Ingredients

  • 1.5 lbs beef ribs (short ribs or chuck ribs), 1.5–2 lbs
  • 6 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 leaves bay leaves
  • ¾ cup beef broth or water
  • 1 tbsp white vinegar

    Pat ribs dry with paper towels. Season all over with salt and black pepper.

    Heat 2 tbsp olive oil in a skillet over medium-high until shimmering. Sear ribs 2 minutes per side until browned edges form.
