Ingredients
- 12 oz spaghetti
- ½ cup olive oil
- 6 cloves garlic cloves
- ½ cup fresh parsley
- 1 tsp black pepper
- 1 tbsp salt

Bring a large pot of salted water to a boil. Add the 12 oz spaghetti and cook until al dente, about 9-11 minutes. Reserve 1 cup of pasta water before draining.

While pasta cooks, thinly slice the 6 garlic cloves. Chop the 0.5 cup parsley leaves and stems finely.

In a large skillet, heat the 0.5 cup olive oil over medium heat. Add the sliced garlic and cook, stirring frequently, until golden and fragrant, about 3-4 minutes. Do not let it brown too much.

When the garlic is golden, remove the skillet from heat and stir in the chopped parsley and 1 tsp black pepper. The residual heat will release their flavors.

Add the drained spaghetti to the skillet with the garlic oil. Toss well to coat, adding reserved pasta water a few tablespoons at a time until the sauce clings to the pasta, about 2-3 minutes.

Season with salt to taste and serve immediately, topped with extra parsley or red pepper flakes if desired.
