  • 1.5 tbsp sugar
  • ¼ cup sprinkles (rainbow or funfetti)
  • 1 tsp baking powder
  • ¼ tsp each salt and vanilla extract

    Pour wet ingredients into dry and fold until just combined; small lumps are fine.

    Fold in sprinkles gently with a few strokes—don't overmix.

    Heat butter in a skillet over medium until foamy, about 90 seconds.

    Pour 1/4-cup batter for each pancake; cook until edges look dry and bubbles appear, ~2 minutes.
