Ingredients
- 4 slices back bacon rashers
- 4 pieces pork sausages
- 4 large eggs
- 200 g button mushrooms
- 2 medium tomatoes
- 400 g canned baked beans in tomato sauce
- 1.5 tbsp butter
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp fresh parsley

Preheat the oven to 200°C (180°C fan). Cut mushrooms in half and halve the tomatoes lengthwise.

Heat 1 tbsp olive oil in a large skillet over medium-high heat.

Cook the sausages for 12-15 minutes, turning occasionally, until golden and cooked through. Transfer to a plate and set aside.

In the same skillet, cook the bacon for 3-4 minutes per side until crispy. Remove and set aside.

Add remaining oil and butter to the skillet. Sauté mushrooms for 4-5 minutes until tender, season with salt and pepper. Transfer to plate.

Place tomato halves cut-side down in the skillet and cook for 3-4 minutes until softened and lightly charred.

Heat the baked beans in a small saucepan over medium heat for 3-4 minutes, stirring occasionally.

Crack eggs into the skillet around the tomatoes and cook over medium heat for 3-4 minutes until whites are set but yolks remain slightly runny, or cook longer if preferred.

Divide all components between two plates: arrange sausages, bacon, mushrooms, and tomatoes. Place cooked eggs alongside.

Spoon warm baked beans onto each plate and garnish with fresh parsley. Serve immediately.
