British Black Pudding and Eggs

- 8 oz black pudding
- 4 whole eggs
- 2 tablespoons olive oil
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- 1 tablespoon fresh parsley or chives (optional), chopped

Remove the black pudding from its casing by peeling away the skin. Place the pudding on a cutting board and slice it straight down into rounds about 1/2 inch thick, like cutting a banana.

Place a 10-inch skillet over medium-high heat and pour in 2 tablespoons of olive oil, tilting the pan so the oil spreads evenly across the bottom.

When the oil shimmers and slides quickly across the pan, lay each black pudding slice flat in the skillet, leaving space between them so they don't touch, about 90 seconds of heating.

Cook the pudding slices for 2–3 minutes without moving them until the bottoms turn dark brown and feel crispy when you press with a spatula.

Flip each slice using a spatula and cook the other side for another 2 minutes until it is also dark brown and crispy.

Push the pudding slices to the edges of the skillet, creating an empty center space where you will cook the eggs.

Crack 4 eggs one at a time into a small bowl, then pour each into the center of the skillet, spreading them out so they are not touching.

Reduce the heat to medium-low and cook for 3–4 minutes until the egg whites turn solid white and opaque, but the yolks still jiggle slightly when you tilt the pan.

Sprinkle 1/4 teaspoon of salt and 1/8 teaspoon of black pepper evenly over the eggs and pudding.

Remove the skillet from heat and carefully slide the eggs and pudding onto a serving plate, dividing between two plates.
