Ingredients
- 2 cups strawberries
- 1 large orange
- 1 cup plain yogurt
- 2 slices bread
- 1 tbsp olive oil
- 1 cup microgreens
- 1 tsp honey
Instructions
- 1
Preheat oven to 400°F (200°C). Cut the 2 slices of bread into 1-inch cubes and toss with 1 tbsp olive oil and a pinch of salt. Spread on a baking sheet.
- 2
Bake the bread cubes for 8-10 minutes, until golden and crisp, shaking the pan halfway. Set aside to cool.
- 3
Hull and slice the 2 cups strawberries. Peel the 1 large orange and cut into segments, catching any juice. Place both in a bowl.
- 4
In a small bowl, mix the 1 cup yogurt with 1 tsp honey until smooth. If you like, add a pinch of cinnamon or vanilla.
- 5
To serve, spoon the yogurt onto plates, top with the fruit, then scatter the croutons and 1 cup microgreens over the top. Drizzle with any reserved orange juice.
- 6
Serve immediately so the croutons stay crunchy.
