Ingredients
- 4 medium potatoes
- 1 sheet puff pastry
- 1 large egg
- 3 cups vegetable oil
- 1 teaspoon salt
- ½ teaspoon pepper

Preheat oven to 400°F (200°C). Thaw puff pastry if frozen, then cut into 4 long strips, each about 1 inch wide.

Brush the 1 beaten egg over the pastry strips. Weave or twist the strips into a flower-basket shape, pressing ends together to seal.

Place the pastry basket on a baking sheet lined with parchment. Bake until golden and puffed, about 15-20 minutes.

While pastry bakes, peel and cut the 4 potatoes into thin fries. Soak in cold water for 10 minutes, then pat dry thoroughly.

Heat the 3 cups vegetable oil in a deep pot to 350°F (175°C). Fry the fries in batches until golden and crispy, about 5-7 minutes per batch.

Drain fries on paper towels. Season with the 1 teaspoon salt and 0.5 teaspoon pepper while hot.
