- 12 whole zucchini flowers
- 1 cup all-purpose flour
- 1 cup sparkling water
- ½ teaspoon salt
- 2 cups vegetable oil
- 1 medium tomato

Gently rinse the 12 zucchini flowers and pat dry. Remove the stamens from inside each flower, being careful not to tear the petals.

In a bowl, whisk together 1 cup flour, 1 cup sparkling water, and 1/2 tsp salt until smooth. The batter should be thin enough to coat the back of a spoon.

Heat 2 cups vegetable oil in a deep pan over medium-high until a drop of batter sizzles immediately, about 350°F (175°C).

Dip each flower into the batter, letting excess drip off, then fry in batches without crowding. Cook until golden and crisp, about 2-3 minutes per side.
