Scrub the 4 medium potatoes and slice them into 1/4-inch rounds. Pat dry with a clean towel to remove excess moisture.

Heat the 3 tbsp vegetable oil in a large skillet over medium-high heat until shimmering, about 2 minutes.

Add the potato slices in a single layer, working in batches if needed to avoid crowding. Cook without stirring for 5 minutes, until the bottoms are golden brown.
