Ingredients
- 1 lb pork liver
- ½ cup all-purpose flour
- 3 cloves garlic
- 2 tbsp soy sauce
- 3 tbsp vegetable oil
- 2 stalks green onions
- ½ tsp salt
- ½ tsp black pepper
Instructions
- 1
Slice the 1 lb pork liver into 1/4-inch thick pieces. Pat dry with paper towels.
- 2
In a shallow dish, mix 0.5 cup flour, 0.5 tsp salt, and 0.5 tsp black pepper. Dredge each liver slice in the flour mixture, shaking off excess.
- 3
Heat 3 tbsp vegetable oil in a large skillet over medium-high heat until shimmering, about 2 minutes.
- 4
Add the liver slices in a single layer (do not crowd the pan). Cook until golden brown and crispy on the bottom, about 3 minutes.
- 5
Flip the liver and cook for another 2-3 minutes until browned and cooked through (no pink inside). Transfer to a plate.
- 6
Reduce heat to medium. Add 3 minced garlic cloves and 2 tbsp soy sauce to the skillet, stirring for 30 seconds until fragrant.
- 7
Return the liver to the skillet, toss to coat in the sauce, and cook for 1 minute until glazed.
- 8
Garnish with 2 chopped green onions and serve hot.
