Ingredients

  • 2 large ripe plantains
  • ½ cup vegetable oil
  • ½ teaspoon salt
  • 1 teaspoon chili powder
  • 2 tablespoons honey
  • 1 tablespoon lime juice

    Peel the 2 plantains and cut them into 1-inch thick diagonal slices. Toss with 1/2 tsp salt and 1 tsp chili powder in a bowl.

    Heat 1/2 cup vegetable oil in a large skillet over medium-high heat until shimmering, about 2 minutes. Test with a plantain piece—it should sizzle immediately.

    Fry the plantain slices in a single layer, working in batches if needed, until golden brown and crispy on both sides, about 3-4 minutes per side. Do not crowd the pan.

    Remove the fried plantains with a slotted spoon and drain on paper towels. Let them rest for 2 minutes.

    In a small bowl, whisk together 2 tbsp honey and 1 tbsp lime juice. Drizzle the glaze over the warm plantain bites and toss gently to coat. Serve immediately.
