Ingredients

  • 1 pound okra
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups vegetable oil
  • ½ cup mayonnaise

    Rinse 1 pound okra and pat dry. Trim the stems, then slice into 1/2-inch rounds.

    Set up three shallow bowls: one with 1/2 cup flour, one with 2 beaten eggs, and one with 1 cup panko mixed with 1 teaspoon salt and 1/2 teaspoon pepper.

    Heat 2 cups vegetable oil in a deep skillet or pot over medium-high until a breadcrumb sizzles immediately, about 350°F.

    Working in batches, dip okra rounds into flour, then egg, then breadcrumbs, pressing to coat. Do not crowd the pan.

    Fry the coated okra in the hot oil until golden brown and crispy, about 3-4 minutes per batch. Turn occasionally for even browning.

    Remove with a slotted spoon and drain on paper towels. Sprinkle with extra salt if desired.
