- ½ cup all-purpose flour
- 2 large eggs
- 1 cup panko breadcrumbs
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cups vegetable oil
- ½ cup mayonnaise

Rinse 1 pound okra and pat dry. Trim the stems, then slice into 1/2-inch rounds.

Set up three shallow bowls: one with 1/2 cup flour, one with 2 beaten eggs, and one with 1 cup panko mixed with 1 teaspoon salt and 1/2 teaspoon pepper.

Heat 2 cups vegetable oil in a deep skillet or pot over medium-high until a breadcrumb sizzles immediately, about 350°F.

Working in batches, dip okra rounds into flour, then egg, then breadcrumbs, pressing to coat. Do not crowd the pan.
