Ingredients

  • 2 cups cooked mac and cheese
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 2 cups vegetable oil
  • ½ teaspoon salt

    Chill the 2 cups cooked mac and cheese for 30 minutes, then roll into 12 tight balls, about 1.5 inches each.

    Set up a breading station: place 0.5 cup flour in one bowl, beat 2 eggs in another, and put 1 cup breadcrumbs mixed with 0.5 teaspoon salt in a third.

    Coat each ball in flour, then dip in egg, then roll in breadcrumbs until fully covered.

    Heat 2 cups vegetable oil in a deep pot to 350°F. Fry 4 balls at a time until golden brown and crispy, about 3-4 minutes, turning occasionally.
