- 2 large green plantains
- 1 cup vegetable oil
- 1 teaspoon salt
- 2 medium tomatoes
- ½ medium onion
- ¼ cup cilantro
- 1 medium lime

Peel the 2 green plantains by cutting off the ends and scoring the skin lengthwise. Slice into 1-inch thick rounds.

Heat 1 cup vegetable oil in a deep skillet over medium-high until shimmering, about 3 minutes. Fry the plantain rounds in batches until pale golden, about 3-4 minutes per side.

Remove the fried rounds and drain on paper towels. While still warm, flatten each round between two sheets of wax paper using a heavy pan or your palm until about 1/4-inch thick.

Return the flattened patties to the hot oil and fry again until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels and sprinkle with 1/2 teaspoon salt.

For the sauce, blend 2 tomatoes, 1/2 onion, 1/4 cup cilantro, juice of 1 lime, and 1/2 teaspoon salt until smooth. Adjust seasoning to taste.
