- 8 oz Emmental cheese
- ½ cup all-purpose flour
- 2 large eggs
- 1 cup panko breadcrumbs
- 2 cups vegetable oil
- ½ cup plain Greek yogurt
- ¼ cup fresh parsley
- ½ tsp salt

Cut the 8 oz Emmental cheese into 1-inch cubes. Place them on a plate and freeze for 20 minutes until firm.

Set up a breading station: place 0.5 cup flour in one bowl, beat 2 eggs in a second, and put 1 cup panko in a third.

Coat each cheese cube in flour, then egg, then panko, pressing gently to adhere. Repeat for a double coat if desired.

Heat 2 cups vegetable oil in a deep skillet to 350°F. Fry the bites in batches, without crowding, until golden brown, about 2-3 minutes per batch.
