Ingredients

  • 8 oz Emmental cheese
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 2 cups vegetable oil
  • ½ cup plain Greek yogurt
  • ¼ cup fresh parsley
  • ½ tsp salt

Instructions

  1. 1

Cut the 8 oz Emmental cheese into 1-inch cubes. Place them on a plate and freeze for 20 minutes until firm.

  2. 2

Set up a breading station: place 0.5 cup flour in one bowl, beat 2 eggs in a second, and put 1 cup panko in a third.

  3. 3

Coat each cheese cube in flour, then egg, then panko, pressing gently to adhere. Repeat for a double coat if desired.

  4. 4

Heat 2 cups vegetable oil in a deep skillet to 350°F. Fry the bites in batches, without crowding, until golden brown, about 2-3 minutes per batch.

  5. 5

Drain on paper towels and sprinkle with 0.5 tsp salt while hot.

  6. 6

In a small bowl, mix 0.5 cup Greek yogurt with 0.25 cup chopped parsley. Serve as a dipping sauce.
