- 4 large eggs

Heat 2 tbsp olive oil in a large skillet over medium heat. Add 1 sliced bell pepper and cook, stirring occasionally, until softened and lightly charred, about 5 minutes.

Spread the pepper and ham evenly across the skillet. Crack 4 eggs directly over the mixture, spacing them apart.
