Ingredients
- 2 whole duck breast
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons vegetable oil
- 4 whole lettuce leaves
- 1 whole orange

Pat the 2 duck breasts dry with paper towels. Score the skin in a diamond pattern, then season both sides with the 1 tsp salt and 1/2 tsp black pepper.

Heat the 2 tbsp vegetable oil in a skillet over medium-high. Place the duck skin-side down and cook until the skin is deep golden and crispy, about 6-8 minutes.

Flip the duck and cook to your desired doneness, about 4-6 minutes for medium. The internal temperature should reach 135°F for medium, or cook longer for well done.

Rest the duck on a cutting board for 5 minutes, then slice thinly against the grain.
