- 1.5 lb chicken thighs (boneless, skinless)
- ½ cup all-purpose flour
- 1 large egg
- ¼ cup orange marmalade
- 1 medium red onion
- ½ cup vegetable oil

Cut the 1.5 lb chicken thighs into 2-inch pieces. In a shallow bowl, beat the 1 egg. Place the 0.5 cup flour in another shallow bowl. Dip each piece in egg, then coat in flour, shaking off excess.

Heat the 0.5 cup vegetable oil in a large skillet over medium-high heat until shimmering, about 2 minutes. Add chicken pieces in a single layer (work in batches if needed) and fry until golden brown and cooked through, about 5-6 minutes per side. Drain on paper towels.

While chicken cooks, thinly slice the 1 red onion. In a small bowl, combine the sliced onion with 2 tbsp of the orange marmalade (reserve the rest for sauce). Set aside to marinate.

In another small bowl, mix the remaining orange marmalade with 2 tbsp water and a pinch of salt to make the dipping sauce.
