Ingredients
- 1 lb chicken gizzards
- 1 medium onion
- 1.5 lb potatoes
- 2 tbsp butter
- ¼ cup milk
- 2 tbsp vegetable oil

Boil the 1.5 lb potatoes in salted water until fork-tender, about 15 minutes. Drain and return to pot.

Mash potatoes with 2 tbsp butter and 1/4 cup milk until smooth. Season with salt and pepper. Cover and set aside.

While potatoes cook, trim and rinse 1 lb gizzards. Pat dry, then season with salt and pepper.

Heat 2 tbsp oil in a large skillet over medium-high. Add gizzards in a single layer and cook until browned and cooked through, about 8 minutes, turning occasionally.

Add 1 sliced onion to the skillet and cook until soft and golden, about 3 minutes. Serve gizzards and onions over mashed potatoes.
