- ½ cup all-purpose flour
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- 2 cup vegetable oil

Rinse the 1 lb chicken gizzards and pat dry. Trim any excess fat or sinew, then cut each gizzard in half if large.

In a shallow bowl, mix 0.5 cup flour, 1 tsp paprika, 1 tsp garlic powder, and 1 tsp salt. Dredge each gizzard in the flour mixture, shaking off excess.

Heat 2 cups vegetable oil in a deep skillet over medium-high until shimmering, about 350°F. Fry the gizzards in batches, not crowding the pan, until golden brown and cooked through, about 5-7 minutes per batch.
