Ingredients
- 1.5 lb chicken pieces
- ½ cup vegetable oil
- 4 shallots
- 3 red chilies
- 1 lime
- ¼ cup crushed peanuts
- 1 tsp salt
- ¼ cup parsley

Season chicken with salt. Heat oil in a large skillet over medium-high.

Fry chicken until golden and cooked through, about 6-8 minutes per side. Drain on paper towels.

Slice shallots and chilies thinly. In a small bowl, squeeze lime juice over them.

In the same skillet, remove excess oil, leaving 1 tbsp. Sauté shallots and chilies for 2 minutes.

Add crushed peanuts and lime juice mixture. Stir for 1 minute.
