- 1 cup breadcrumbs
- 2 large egg
- 2 cups vegetable oil
- ½ cup mayonnaise

Pat dry 1 lb calamari rings with paper towels. Set up three shallow bowls: 0.5 cup flour, 2 beaten eggs, and 1 cup breadcrumbs.

Dredge each ring in flour, then egg, then breadcrumbs, pressing lightly to coat. Place on a plate.

Heat 2 cups vegetable oil in a deep skillet over medium-high until shimmering, about 5 minutes. Fry rings in batches without crowding until golden and crispy, 2-3 minutes per batch.
