Ingredients

  • 1 lb calamari rings
  • 2 medium plantains
  • 1 cup all-purpose flour
  • 2 large egg
  • 2 cups vegetable oil
  • 1 whole lime
  • 1 tsp salt
  • ½ tsp black pepper

    Peel the plantains and slice them into 1/4 inch thick rounds. Heat 1 cup of the vegetable oil in a large skillet over medium-high heat until shimmering, about 2 minutes.

    Fry the plantain slices in a single layer until golden brown and crispy, about 3-4 minutes per side. Remove with a slotted spoon and drain on paper towels. Sprinkle with a pinch of salt.

    In a shallow bowl, whisk the eggs with 1/2 tsp salt and the black pepper. Place the flour in another shallow bowl.

    Pat the calamari rings dry with paper towels. Dip each ring into the egg mixture, then dredge in the flour, shaking off any excess.

    In a separate large skillet, heat the remaining 1 cup of vegetable oil over medium-high heat until a drop of water sizzles. Fry the calamari in batches, without crowding, until golden and crispy, about 2-3 minutes per batch.
