Fried Beef with Black Beans and Rice

Ingredients
- 1 lb beef sirloin, thinly sliced
- 2 cups cooked white rice
- 1 can (15 oz) canned black beans, drained and rinsed
- 1 medium yellow onion, sliced
- 2 tbsp olive oil
- ¼ cup fresh cilantro, chopped

Season the 1 lb beef with salt and pepper. Heat 1 tbsp olive oil in a large skillet over high heat until shimmering, about 2 minutes.

Add the beef in a single layer and cook without stirring until browned and crispy on one side, about 3 minutes. Flip and cook 2 minutes more until browned but still tender.

Remove beef to a plate. Reduce heat to medium, add remaining 1 tbsp olive oil and the 1 sliced onion. Cook, stirring, until soft and golden, about 5 minutes.

Add the 1 can black beans and 2 cups cooked rice to the skillet. Stir and cook until heated through, about 3 minutes, until steaming.

Return beef to the skillet, toss with the rice and beans, and sprinkle with the 1/4 cup cilantro. Serve hot.
