Fried Baby Squid

Ingredients
- 500 g baby squid, cleaned
- 100 g all-purpose flour
- 1 tsp salt
- ½ tsp black pepper
- 500 ml vegetable oil
- 1 lemon

Pat the 500g baby squid dry with paper towels. If they are not already cleaned, remove the beak and cartilage, and slice larger ones into rings.

In a shallow bowl, mix the 100g flour with 1 tsp salt and 0.5 tsp black pepper. Dredge the squid in the flour, shaking off any excess.

Heat the 500ml vegetable oil in a deep pan to 180°C (350°F) — a cube of bread should sizzle and turn golden in about 30 seconds.

Fry the squid in small batches, without crowding the pan, for 2-3 minutes until golden and crispy. Remove with a slotted spoon and drain on paper towels.

Season the fried squid with a little extra salt if needed, and serve hot with lemon wedges for squeezing over.
