Ingredients

  • 4 medium ripe tomatoes, diced into 1/4-inch pieces
  • ½ medium white or red onion, finely diced
  • ¼ cup fresh cilantro, chopped
  • 1 small jalapeño, seeds and membranes removed, minced
  • 1 whole lime, juiced
  • ½ tsp salt

Instructions

    Dice tomatoes into 1/4-inch pieces, collecting juices in a medium bowl.

    Finely dice onion and add to the bowl with tomatoes.

    Remove jalapeño seeds and membranes, then mince finely and add to bowl.

    Chop cilantro and add to the bowl.

    Squeeze lime juice over everything and sprinkle with salt.

    Stir gently to combine. Taste and adjust salt or lime as needed.

    Serve immediately or chill up to 4 hours before serving.
