Ingredients

  • 2 cups all-purpose flour
  • 6 tbsp cold butter, cubed
  • 2 tbsp granulated sugar
  • ¾ cup heavy cream
  • 2 tsp baking powder
  • ½ cup clotted cream
  • ½ cup jam (any flavor)

    Mix flour, sugar, baking powder, and a pinch of salt in a bowl.

    Add cold butter cubes and rub between your fingers until mixture looks like coarse breadcrumbs.

    Pour in heavy cream and stir until dough just comes together. Do not overmix.

    Turn dough onto a floured surface and gently pat into a 1-inch-thick disk.

    Cut disk into 8 wedges with a sharp knife. Place on a lined baking sheet.

    Bake at 400°F until golden brown on top, 12–14 minutes.
