French Toast with Berries and Whipped Cream

Ingredients

  • 4 slices thick-sliced brioche or challah bread
  • 3 large eggs
  • ½ cup whole milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter
  • 1 cup strawberries
  • ½ cup blueberries
  • ½ cup whipped cream

Instructions

    In a shallow dish, whisk the 3 eggs, 1/2 cup milk, and 1 teaspoon vanilla until smooth and frothy.

    Heat 1 tablespoon of the butter in a large skillet over medium heat until melted and sizzling.

    Dip each of the 4 bread slices into the egg mixture, letting them soak for about 15 seconds per side until saturated but not falling apart.

    Place 2 soaked slices in the skillet and cook until golden brown on the bottom, about 3 minutes. Flip and cook the other side until golden, another 2-3 minutes.

    Transfer to plates and repeat with the remaining 1 tablespoon butter and 2 bread slices.

    Top each serving with the 1 cup strawberries and 1/2 cup blueberries, then dollop with the 1/2 cup whipped cream.
