Ingredients

  • 1 cup almond flour
  • 1 cup powdered sugar
  • ¼ cup all-purpose flour
  • ½ cup butter, melted
  • 4 large egg whites
  • ¼ teaspoon salt

Instructions

    Set the oven to 400°F and wait for the indicator light or beep to confirm it has finished heating, about 10 minutes.

    Brush the inside of 12 small muffin cups (a standard muffin tin) with melted butter, coating the bottom and sides evenly.

    In a medium bowl, whisk together the almond flour, powdered sugar, all-purpose flour, and salt until no lumps remain, about 1 minute.

    In a separate bowl, whisk the egg whites until they are foamy and no visible yolk remains, about 90 seconds.

    Pour the melted butter into the egg whites and whisk until fully combined and the mixture looks pale and smooth, about 30 seconds.

    Pour the egg-butter mixture into the dry ingredients and stir gently with a rubber spatula until just combined—the batter should look smooth with no visible dry flour streaks.

    Divide the batter evenly among the 12 buttered muffin cups, filling each about three-quarters full using a small spoon or cookie scoop.

    Place the muffin tin on the center rack of the preheated oven and bake for 12–14 minutes until the tops are golden brown and a toothpick inserted into the center of one cake comes out with no wet batter clinging to it.

    Remove the muffin tin from the oven and let the financiers rest in the tin for 5 minutes so they firm up enough to handle.

    Tip each financier out of its muffin cup onto a cooling rack and let them cool completely before serving, about 10 minutes.
