Ingredients
- 1 cup fox nuts (makhana)
- 4 cups whole milk
- ½ cup sugar
- 4 whole cardamom pods
- 2 tbsp ghee or butter
- ¼ cup mixed nuts (walnuts, almonds), chopped

Heat 2 tbsp ghee in a heavy pan over medium heat. Add 1 cup fox nuts and toast, stirring often, until lightly golden and crisp, about 3-4 minutes. Remove and set aside.

In the same pan, add 4 cups whole milk and bring to a gentle boil over medium-high heat, stirring occasionally to prevent scorching.

Reduce heat to low and simmer the milk, stirring frequently, until it reduces by about one-third and thickens slightly, about 15-20 minutes.

Crush 4 cardamom pods to release seeds; add them to the milk along with 1/2 cup sugar. Stir until sugar dissolves, about 2 minutes.

Add the toasted fox nuts back to the milk and simmer for another 5 minutes, until the pudding thickens to a creamy consistency.

Stir in 1/4 cup chopped nuts, reserving a few for garnish. Serve warm or chilled, topped with the reserved nuts.
