Ingredients

  • 1.5 tbsp butter
  • ½ medium, thinly sliced onion
  • ½ medium, diced bell pepper
  • 2 large eggs

Instructions

    Heat 0.5 tbsp butter in an 8-inch skillet over medium until foaming.

    Add onion and pepper, cook until softened and lightly golden, ~5 minutes.

    Transfer vegetables to a plate; wipe the skillet with a paper towel.

    Add remaining 1 tbsp butter to the skillet, let it melt and foam over medium-high.

    Whisk eggs with a pinch of salt and pepper, pour into the skillet and tilt to spread thin.

    When edges are set but center still jiggles slightly, scatter vegetables on one half and fold the omelet in half.
