Ingredients
- 2 cups tapioca flour
- ¾ cup milk
- 3 tbsp butter
- 1 large egg
- 1.5 cups shredded mozzarella cheese
- ½ tsp salt

Preheat oven to 375°F (190°C). Grease a 9-inch round baking dish or line with parchment paper.

In a small saucepan, heat 0.75 cup milk and 3 tbsp butter over medium until butter melts and mixture is hot, about 3 minutes. Do not boil.

In a large bowl, combine 2 cups tapioca flour and 0.5 tsp salt. Pour the hot milk mixture over the flour and stir with a wooden spoon until a sticky dough forms, about 2 minutes.

Let the dough cool for 5 minutes, then beat in 1 large egg until fully incorporated. The dough will be glossy and sticky.

Fold in 1.5 cups shredded mozzarella cheese until evenly distributed.

With wet hands, shape the dough into 8 equal balls. Arrange them in the prepared dish in a circle, leaving a small gap between each ball to form a flower shape.
