Ingredients
- 8 corn tortillas
- 2 cups cooked chicken, shredded
- ½ cup vegetable oil
- 2 cups shredded lettuce
- 1 cup guacamole
- 1 cup shredded cheese
- 1 can (16 oz) refried beans
- 2 cups cooked rice

Warm the 8 corn tortillas in a dry skillet over medium heat for 30 seconds per side, until pliable. Keep them covered with a towel.

Place 1/4 cup of the 2 cups shredded chicken along the center of each tortilla. Roll tightly and secure with a toothpick.

Heat the 1/2 cup vegetable oil in a large skillet over medium-high until shimmering. Fry 3-4 flautas at a time, seam-side down, until golden and crisp, about 2-3 minutes per side. Drain on paper towels.

Warm the 1 can refried beans and 2 cups cooked rice in separate saucepans over medium heat, stirring occasionally, until hot, about 5 minutes.

Serve the flautas with the rice and beans. Top with the 2 cups shredded lettuce, 1 cup guacamole, and 1 cup shredded cheese. Add salsa if you like.
