Ingredients

  • 1 cup sugar
  • ¼ cup water
  • 14 oz sweetened condensed milk
  • 12 oz evaporated milk
  • 4 large eggs
  • 1 tsp vanilla extract

    Preheat oven to 350°F. In a small saucepan, combine 1 cup sugar and 1/4 cup water. Cook over medium heat, swirling occasionally, until sugar dissolves and turns deep amber, about 10 minutes.

    Immediately pour the hot caramel into a 9-inch round baking dish, tilting to coat the bottom evenly. Set aside to harden.

    In a blender, combine the 14 oz sweetened condensed milk, 12 oz evaporated milk, 4 eggs, and 1 tsp vanilla extract. Blend until smooth, about 30 seconds.

    Pour the custard mixture over the hardened caramel in the baking dish.

    Place the baking dish in a larger roasting pan. Fill the roasting pan with hot water until it reaches halfway up the sides of the baking dish.

    Bake for 50-60 minutes, until the custard is set but still jiggles slightly in the center when gently shaken.

    Remove from the water bath and let cool to room temperature. Refrigerate for at least 4 hours or overnight.

    To serve, run a knife around the edge, invert onto a plate, and let the caramel sauce flow over the flan.
