Ingredients

  • 1 lb strawberry, hulled and halved
  • ¾ cup sugar
  • ½ whole lemon, juiced

Instructions

    Add strawberries, sugar, and lemon juice to a heavy-bottomed saucepan over medium-high heat.

    Stir occasionally as the mixture heats, then bring to a rolling boil.

    Boil for 5–7 minutes, stirring and breaking up the berries with the back of a spoon, until thick and glossy.

    Test by dropping a small spoonful on a cold plate—it should wrinkle slightly when pushed.

    Remove from heat and let cool in the pan for 2 minutes, then transfer to a jar or bowl.
