  • 12 oz fresh raspberries
  • ¾ cup sugar
  • ½ whole lemon

Instructions

    Combine raspberries and sugar in a heavy saucepan over medium-high heat.

    Stir constantly, crushing berries against the pan sides, until mixture boils vigorously.

    Squeeze in lemon juice and stir once, then remove from heat immediately.

    Let cool 2 minutes — jam will thicken as it cools, so don't expect it to be thick on the stove.
