Ingredients

  • 1.5 lb white fish fillets
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups milk
  • ½ cup breadcrumbs
  • 1 cup cheddar cheese, grated
  • 1 whole lemon
  • 2 tbsp fresh dill, chopped

Instructions

    Preheat oven to 400°F. Butter a 9x13 inch baking dish. Place the 1.5 lb fish fillets in the dish in a single layer; season with salt and pepper.

    In a saucepan over medium heat, melt 3 tbsp butter. Whisk in 3 tbsp flour and cook for 1 minute until bubbly.

    Gradually whisk in 2 cups milk. Cook, stirring constantly, until the sauce thickens and coats the back of a spoon, about 5 minutes.

    Remove sauce from heat. Stir in 1 cup grated cheddar and 2 tbsp chopped dill until melted. Pour the sauce evenly over the fish.

    In a small bowl, mix 0.5 cup breadcrumbs with 1 tbsp melted butter (optional). Sprinkle over the sauce.

    Bake for 20-25 minutes, until the fish flakes easily with a fork and the top is golden and bubbling.

    Let rest for 5 minutes. Serve with lemon wedges and extra dill if desired.
