Ingredients

  • 8 oz fettuccine
  • 4 tbsp butter
  • ¾ cup heavy cream
  • 1 cup Parmesan cheese, finely grated
  • 1 whole garlic clove, minced
  • 1 pinch salt and black pepper to taste

Instructions

  1. 1

Boil salted water in a large pot. Add fettuccine and cook until al dente, ~9 minutes. Reserve 0.5 cup pasta water, then drain.

  2. 2

Melt butter in the same pot over medium heat. Add minced garlic and cook until fragrant, ~45 seconds.

  3. 3

Pour in cream and bring to a gentle simmer, stirring occasionally, ~2 minutes.

  4. 4

Remove from heat. Stir in Parmesan in batches until fully melted and sauce is smooth.

  5. 5

Add cooked pasta to the sauce and toss, adding pasta water 1 tbsp at a time if too thick.

  6. 6

Season with salt and pepper to taste. Serve immediately while hot.
