Ingredients
- 1.5 lb chicken breast
- 1 cup fenugreek leaves
- ½ cup plain yogurt
- 3 tbsp tomato paste
- 1 large onion
- 3 cloves garlic
- 1 tsp ground cumin
- 1 tsp salt

Cut the 1.5 lb chicken breast into 1-inch cubes. In a bowl, mix the chicken with 1/2 cup yogurt, 3 tbsp tomato paste, 1 cup fenugreek leaves, 3 minced garlic cloves, 1 tsp ground cumin, and 1 tsp salt. Let marinate for 10 minutes.

While the chicken marinates, slice the 1 large onion into thick rings. Soak 8 wooden skewers in water for 10 minutes to prevent burning.

Thread the marinated chicken onto the skewers, pressing pieces together. Preheat a grill or grill pan over medium-high heat.

Grill the skewers for 10-12 minutes, turning every 3-4 minutes, until the chicken is charred at the edges and cooked through (no pink inside).

In the same pan, grill the onion rings for 3-4 minutes per side until softened and lightly charred. Serve the skewers over the onions, with extra fenugreek leaves if desired.
