Ingredients

  • 1.5 cups cooked beans
  • ½ cup manioc flour
  • 2 large eggs
  • 1 medium onion
  • 2 cloves garlic
  • 2 tbsp olive oil

Instructions

    Heat 2 tbsp olive oil in a skillet over medium. Add 1 sliced onion and 2 minced garlic cloves; cook until soft and golden, about 5 minutes.

    Stir in 1.5 cups cooked beans (with a little of their liquid) and mash lightly with a fork. Cook until beans are creamy and heated through, about 3 minutes.

    Add 0.5 cup manioc flour and stir constantly until it absorbs moisture and turns crumbly, about 2 minutes. Season with salt and pepper.

    Make two wells in the bean mixture and crack 1 egg into each. Cover and cook until whites are set but yolks are still runny, about 3 minutes.

    Sprinkle with chopped parsley or cilantro if you have it, and serve hot.
