Ingredients

  • 4 tbsp butter
  • 3 cloves garlic cloves, minced
  • 1.5 cups cassava flour (farinha de mandioca)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 tbsp fresh parsley or scallions, chopped
  • ½ lime lime, halved
  • 1 tbsp olive oil

Instructions

    Heat butter and olive oil in a 10-inch skillet over medium-high until foaming, ~1 minute.

    Add garlic and cook, stirring constantly, until fragrant and light golden, 45 seconds.

    Add cassava flour and stir continuously. It will toast and darken slightly, 4-5 minutes.

    When flour is golden-brown and smells deeply nutty, remove from heat.

    Stir in salt, pepper, and fresh herbs until evenly combined.

    Squeeze lime juice over the top and toss once more.

    Serve warm while still crispy. Leftovers store in an airtight container for 3 days.
