Ingredients
- 8 pieces store-bought falafel (8–10 pieces, about 8 oz)
- 3 tablespoons tahini
- ½ whole lemon (juiced)
- 2 tablespoons water
- 2 whole large pita bread or flatbread
- 1 whole tomato, thinly sliced
- ½ whole cucumber, thinly sliced, and fresh herbs (parsley, cilantro, or mint, chopped)

Whisk tahini, lemon juice, and water in a small bowl until smooth and pourable.

Heat falafel in a skillet or oven following package instructions until warm and crispy outside.

Warm pita bread in the same skillet, flipping once, until soft and pliable, ~60 seconds.

Spread tahini sauce across the inside of each pita, leaving a 1-inch border at the edges.
